Mason jar salads make eating healthy easy & convenient! Plus, it’s a great way to transform leftovers from dinner, into a delicious & filling lunch. Rugani’s 100% vegetable juices also make nutritious & guilt-free salad dressings.
Ingredients
Salad
1/2 - 1 cup cooled Happy Earth People Pasta (gluten free & vegan friendly)
Roasted butternut
Chickpeas
1/4 - 1/2 an avocado
1 handful of baby spinach
1 Tbsp pumpkin seeds
Dressing
1/3 cup extra-virgin olive oil
1/8 cup red vinegar
2 Tbsp lime juice
2-3 Tbsp maple syrup
1 Tbsp toasted sesame seeds
Salt and black pepper to taste
Instructions
- Mix all the Dressing ingredients in a blender or an empty jar with a lid, until smooth.
- Add 4 tablespoons of the dressing to the bottom of the jar and layer the chickpeas next.
- Add the butternut, spinach, avocado, pasta and pumpkin seeds on top of the chickpeas.
- When you're ready to enjoy your salad, empty the contents into a bowl. If you're on the road, use a bigger mason jar and shake the jar until the ingredients are mixed.
