Mason Jar Pasta Salad (V)

Mason jar salads make eating healthy easy & convenient! Plus, it’s a great way to transform leftovers from dinner, into a delicious & filling lunch. Rugani’s 100% vegetable juices also make nutritious & guilt-free salad dressings.

Ingredients

Salad
1/2 - 1 cup cooled Happy Earth People Pasta (gluten free & vegan friendly)
Roasted butternut
Chickpeas
1/4 - 1/2 an avocado
1 handful of baby spinach
1 Tbsp pumpkin seeds
 
Dressing
1/3 cup extra-virgin olive oil
1/8 cup red vinegar
1/3 cup Rugani 100% Ginger Infused Carrot Juice
2 Tbsp lime juice
2-3 Tbsp maple syrup
1 Tbsp toasted sesame seeds
Salt and black pepper to taste

Instructions

  1. Mix all the Dressing ingredients in a blender or an empty jar with a lid, until smooth.
  2. Add 4 tablespoons of the dressing to the bottom of the jar and layer the chickpeas next.
  3. Add the butternut, spinach, avocado, pasta and pumpkin seeds on top of the chickpeas.
  4. When you're ready to enjoy your salad, empty the contents into a bowl. If you're on the road, use a bigger mason jar and shake the jar until the ingredients are mixed.
